Staying Cool this Summer - Feat. Dragonfruit Ice Cream by @chefpriyanka
This recipe is a new favorite of mine because it’s vegan-friendly, requires only a few ingredients, and is super quick to make. I am increasingly conscious about not only what I’m putting on my body, but also what I’m putting in my body, so this recipe really stood out to me as a healthy yet delicious treat (and WOW it’s even more mouthwatering than it looks). This also got me to discover the pitaya fruit, more commonly known as dragonfruit, which is loaded magnesium, fiber, iron, antioxidants, vitamins B2 and C. After all, it’s important to always be thinking about our diets and lifestyles alongside maintaining a healthy skincare routine to truly glow from the inside out!
1 frozen banana
5–6 frozen strawberries
1 tsp light agave
2 tbsp unsweetened coconut milk
1 tsp pitaya (dragonfruit) powder
Blend banana and strawberries together.
Add the agave and coconut milk. Mix.
Add the powder slowly and mix everything together.
Sprinkle coconut chips on top for a slight crunch.
